Vegan Sauteed Bitter Gourd

A dish that is both beautiful and healing food. The ingredients heals almost all known serious diseases including cancer.

Commonly cooked with eggs and meat, I used crushed tofu and added turmeric (adds yellow, egg-ish look to the tofu) .

My family loved it .  and even said it smelled fresher than adding scrambled egg.

Ingredients :

2 tbsp of coconut oil ( this oil adds nutty flavor to the dish) or olive oil

2 medium tomatoes chopped, 1 medium red onion sliced, and 1 small garlic sliced

Salt and pepper ( I used 1/2 teaspoon each) , turmeric ( to add yellowish color, makes the tofu look like scrambled egg

2 blocks of crushed firm tofu (use fresh or not the frozen ones)

4 medium sized amapalaya or bitter gourd thinly sliced.

Directions :

1. Heat a clean wok, then add 2 tbsp of coconut oil

2. In the heated oil, Saute onion, garlic and tomatoes.
I usually add onion first , then when it's a bit brown I add the garlic. When you smell that delicious onion and garlic aroma, add the chopped tomatoes.

3. Add the salt, pepper and turmeric. Remember to add or reduce the amount I suggested above according to your preferences.

4. Mix them well. When the odor and the color spices and the TOG ( Tomatoes, Onion and Garlic )
add the crushed tofu then fry for about 5-10 mins. Mix them well.

5. When the excess moisture evaporated already, or when you hear that there's that frying soumd.. mix them and add the ampalaya or bitter gourd. Mix them well, reduce heat to low, then cover.

6. Remember to not mix them again after you cover the wok, so the bitterness of the ampalaya or the bitter gourd will not come out.

After about 10 - 15 minutes. You may already serve it and enjoy with rice.

This serves 8-10

Once a month cooking

I had been contemplating and studying about how will we be able to do once month cooking OAMC. It's been like more than 3 years. I started with just a week of cooking, then after a while, I did the 2 weeks cooking. But as of now, I haven't tried OAMC.

One month cooking will be able to help us save money, time and energy. If I'll be able to do the groceries and going to the wet market once a month, it will definitely help me much with budgeting our time and income. I'll start the planning tomorrow.

Vegetable Meat Seitan - Good Food for Gout Arthritic Individual

My H suffered from a painful gout last year.. He was not able to work and get out of the bed... Just as always, I researched first about it before we went to a doctor.. So when she explained to me about gout arthritis , I already had some ideas as to what she's saying.. Admittedly, I am the type of person who would like to understand completely what our doctor says ( usually by asking so many questions..) Frustratingly, we also  found out that not all doctors know much about what they are talking about..

So, per my research .. gout sufferers are 95% men and mostly caused by a genetic predisposition for such disease.. meaning inherited or simply a body's malfunction to properly dispose of uric acid which had accumulated through the years of eating purine rich foods.

Purine rich foods include eating some sea foods (like sardines, herring, mussels - tahong) , red meat, internal organs , and other vegetables like string beans, monggo sprouts, legumes ( peanuts, sweet camote, etc)

Oh well, we just love eating the above food ( except internal organs )  I bought a pair of crutches from Mercury drug which is about Php 723 one.. So a pair cost us about Php 1,446..

My research also brought me to a site about a vegetable meat that may be good for gout arthritic person.. as a substitute for red / white meat.. which I am now planning to do today..

I will need :

· 1 cup gluten flour / vital wheat gluten
· approx. 3/4 cup water or broth
· 2 tbsp soy sauce
· 1 tsp ginger powder
· 1 tsp garlic powder
· 6 cups broth for cooking
· 3-4 slices onion (optional)
2-3 pieces fresh ginger (optional)

Oh and I also looked for stores to buy the gluten flour.
Later before lunch I will go to Baker's Depot - robinson's Galleria & Sweet Craft at Mandaluyong..

I'll take pictures and will post the outcome..

Home Chef

This blog site is now officially created to serve as our journal in modifying our food choices and rectifying our method of cooking.
All of us in the family are overweight. I had been diagnosed with diabetes, polycystic ovaries, endometriosis, fibrocystic disease and recently I found out, I'm ADD. We are hoping that with this venture we will also lose weight and be healthier than before.
J, my soulmate, together with my sons M and R promised to contribute. Though, am not really hopeful with it, but I will post their comments with regards to the taste and texture of the healthy recipes I will be cooking for them in the coming months and years.
Currently I am 60 lbs overweight ( J wants to keep quiet about it!), my two sons are around 10 lbs above their ideal weight.
With the radical change in our menu we will definitely lose weight in less than a year.
